this is for you @rubberzebra: how to make raw pesto

the most adorable twitterer I know asked me how to make raw pesto.  so here it is! it was so delicious, I will make it again and again and again.  And so simple!!!!

2 tablespoons pine nuts, soaked 20 minutes

6 tablespoons extra-virgin olive oil

3 cloves garlic, chopped

6 tablespoons chopped fresh basil

1 tablespoon chopped parsley

pinch sea salt

*in a blender combine all ingredients and blend until smooth. If the sauce is too thick add a tablespoon of warm water.

yield 1/2 cup.

Now that we have a household of 5, I modified the amounts roughly to the proportion of how they are in the first recipe.  Fresh basil is B A N A N A S!  The smell, the flavor, the aroma, the overpowering of the senses, it’s a sure need to have in your herb garden!

It’s so yummy it makes you feel light you are being naughty!  raw pesto will always have a place in my belly! :)
